Even though it serves just 98 students in an economically depressed area, Butte Valley High School in Dorris [CA] is offering more opportunities than ever for those students to expand everything from their creativity to their career options.

Meal preparation is only one facet of the instruction, she noted, explaining that kids are also shown how to shop for ingredients they need, and how to make healthy, nutritional choices.

According to Criss, for some students, meals they make in the class might be the only meal those students get for the day, or some might be responsible for cooking their own meals when they get home while their parents are working. To that end, working up from the basics – such as multiple ways to cook an egg – to planning a meal from start to finish can meet the needs of students who must apply the skills now as well as those who might like to pursue a culinary career.
